1 lb. dried pinto
beans
1 med. onion, quartered
2 tsp. salt
1/2 lb. ham hocks or salt pork, cut into cubes
5 c. water
1 clove garlic, minced (optional)
1 tsp. chili powder
1. Soak pinto beans overnight in water to cover;
drain.
2. Combine beans, water, onion, garlic, chili
powder, salt and ham hocks or salt pork in large
pot. Bring to boiling; lower heat; simmer over low
heat 2 1/2 hours, or until beans are very soft.
Remove ham hocks before serving.
This ground beef
and pinto bean dish makes a great everyday meal the
whole family will enjoy, and it's quick and easy to
prepare.
Ingredients:
1 tablespoon olive oil
1 pound extra lean ground beef
1 cup diced onions
1/2 cup diced carrots
1/2 cup diced green bell pepper
1/2 cup diced red or yellow bell pepper or banana
pepper
1 can (14.5 ounces) diced tomatoes with liquid
3 tablespoons tomato paste
1 can (4 ounces) mild chopped green chili, not
drained
2 cans (15 ounces each) pinto beans, drained and
rinsed
1 teaspoon spicy Cajun seasoning or chili powder
blend
1 teaspoon salt, or to taste
1/4 teaspoon dried leaf oregano
1/4 teaspoon fresh ground black pepper
1/4 to 1/2 teaspoon chipotle or other chili powder,
or to taste
Preparation:
Heat olive oil in a large deep skillet over medium
heat. Add ground beef, onion, and carrot; cook,
stirring, until meat is not longer pink. Add the
bell pepper, tomatoes, tomato paste, chopped green
chili, pinto beans, and seasonings. Bring to a
simmer; reduce heat, cover, and continue simmering
over low heat for 20 to 25 minutes. Serve with a
tossed green salad and cornbread for a delicious
weeknight family meal.
Preparation:
Wash beans well, pick over, and drain. Place in a
large kettle and cover with water. Bring to a boil
over high heat. Remove from heat and set aside for 1
hour. Drain the water and add fresh water to cover
beans.
Add the remaining ingredients to the beans. Bring to
a boil over high heat. Reduce the heat and simmer,
covered, until the beans are tender. Taste and
adjust seasonings, adding salt, if necessary.
Serves 4.
Ingredients:
1 can (16 to 18 ounces) baked pork and beans
2 tablespoons light brown sugar
1/4 teaspoon dry mustard
1/4 cup ketchup
2 strips bacon, cut in 1-inch pieces
Preparation:
Combine all ingredients; transfer to a greased
casserole. Cover and bake at 350ฐ for 20 minutes.
Uncover and continue baking for 20 minutes longer.
Serves 4.

2 cups pinto beans, dry

6 drops bottled hot pepper sauce
Preparation:
In 2-quart bean pot or casserole, cover beans with
water; soak overnight. Drain. Cover with fresh
water; add salt pork, onion, and garlic to the
beans. Simmer, covered, for 2 hours. Add salt,
pepper, tomatoes, green pepper, sugar, and hot
pepper sauce. Cover and simmer 3 hours more. Serve
beans with cornbread squares or hot cooked rice.
Makes 8 to 10 servings.
4 cups pinto
beans, picked over and rinsed
3 beef bouillon cubes
1/2 pound thick-cut bacon, cut into ฝ inch pieces
1 large onion, quartered
4 cloves garlic, pressed through a garlic press
1 tablespoon chili powder
1 tablespoon brown sugar
1/2 tablespoon freshly ground black pepper
5 packets Taco Bellฎ mild sauce
Place beans, onion and bouillon cubes in a large pot
with a tight-fitting cover and add enough water to
cover beans by about 2 inches. Bring to a boil over
high heat. Meanwhile, place bacon in a medium frying
pan and saut้ until the fat is translucent, while
stirring over medium heat. Add crushed garlic to the
bacon, remove from heat and stir for about 30
seconds then add mixture to the beans. Reduce heat
and simmer until beans are soft, about 3 to 3 ฝ
hours total cooking time, adding more hot water if
needed. Add chili powder, sugar, pepper and Taco
Bellฎ Sauce. Simmer for another 10 minutes and then
serve.
